Globally acclaimed New Zealand chef Josh Emett and his team from The Oyster Inn in Waiheke Island, are partnering with renowned Australian Chef Jason Saxby and his team at Raes on Wategos, for a very special long lunch in the Dining Room of the iconic Byron Bay location on Sunday 19 March.
Sharing a mutual love for seafood prepared with a Mediterranean influence, Josh and Jason have long respected each other’s culinary skills and, for the first time, the two will be partnering together alongside their teams in the Raes’ kitchen. The jointly curated menu will highlight the best seafood and produce of both New Zealand and the Northern Rivers.
Tickets are $195 per person, including the 6-course menu and a glass of Perrier-Jouet on arrival, with lunch sittings available between 12-4 pm. Both Josh and Jason will be on tableside throughout the day as they talk through the inspiration behind their dishes directly to guests dining.
The menu will include a riff on The Oyster Inn’s signature dishes, including Big Glory Bay salmon tacos, with ginger soy dressing, avocado, chilli and coriander and octopus insalata di mare with waxy potato, celery and saffron aioli. Jason Saxby’s dishes will include his ‘Cornetto’ with cultured dashi cream, yolk, smoked roe and Raviolo filled with sweet corn and egg yolk, spanner crab, garum butter, bottarga and burnt onion oil.
On the day, the Cellar Bar at Raes will also offer a selection of smaller dishes as part of the collaboration which can be enjoyed in addition to the regular menu, all available on a walk-in basis.
This exclusive long lunch, featuring these two internationally renowned chefs is an exciting addition to the 2023 Australian culinary calendar.
