Following the unveiling of Neptune, Windsor’s all-encompassing food, wine and cocktail destination, High Street welcomes the venue’s newest instalment, Impala.
Situated above the south-side local, the lively cocktail bar is the next edition from Nicolas Coulter and Simon Blacher (Hanoi Hannah, Tokyo Tina, Saigon Sally), alongside brothers Dave and Michael Parker (San Telmo, Pastuso).
Buzzing with 70’s disco tunes, Impala is the ideal spot for guests to let their hair down over an array of classic cocktails and extensive whisky list.
Custom banquette seating frames the space, while a disco ball lights up the gold leaf tropical wallpaper that overlooks the bar and lounge. Think palm springs after dark.
Featuring an exclusive in-house whisky locker, Impala entices the return of south-side locals and beyond, with the option to indulge in their own personal bottle of liquor upon each visit. The tipple of choice is then kept safe in a gold glowing cabinet that doubles as a feature wall.
Signature cocktails will include the fruity and sweet Mrs Belleville, that sees Belvedere vodka, peach and ginger liqueur, and Fernet Branca amaro combined with citrus and egg white for a bit of texture, along with the Queen Victoria featuring champagne, Hennessy VSOP cognac and Peychauds bitters with strawberry and basil syrup.
Co-owner Nicolas Coulter says Impala will be a playful spot to retreat as the sun goes down; a social destination to gather amongst familiar faces for an impromptu drink or dedicated evening exploring the extensive cocktail list, interesting bar snacks (prawn cocktails included!) and abundance of liquor.

Open from Thursday – Sunday from 6pm till late, Impala can also double up as a function space upon request.
