Coconut Yogurt with Acai and Blueberry
Serves 3 | Vegan | Raw | Paleo | Dairy Free | Gluten Free
Ingredients
You’ll need a large glass jar with a lid for this recipe.
- 3 cups Banaban Organic Coconut Milk
- 2 pro-biotic gel capsules
- 2 tbsp. Banaban Organic Coconut Nectar
- ¼ cup blueberries
- 3 tsp. Acai Powder
Method
- Sterilise your jar with boiling water
- Add coconut milk, pro-biotic capsules and stir
- Leave jar in a sunny place for around 8-12 hours. A bench underneath a window works well!
- Pop jar in fridge. Chill for another 12 hours.
- Add Coconut Nectar, blueberries and acai powder and enjoy!
Tip: After 12 hours the yogurt will still be a little watery. With each day passing the mixture will begin to thicken. By day 4 the coconut yogurt should resemble Greek yogurt thickness.
