Fresh is best when it comes to coconut water! Throughout my childhood travelling to Fiji, my stepfather would always pick me fresh coconuts and I would use a paw paw leaf stem as a straw.
The thing to look for with buying fresh coconuts is to always get certified organic young coconuts (the green ones), as these will not have been sprayed when entering the country.
Coconut water is rich in dietary fibre, enzymes, vitamin C and minerals such as magnesium and potassium.
Simply add your choice of fruit to your coconut water and place in the fridge overnight.
Coconut Water infused with Mint and Kiwi Fruit
- 1 litre fresh coconut water
- 1 small handful fresh mint leaves
- 1 kiwi fruit, peeled and sliced
Coconut Water infused with Watermelon and Rosemary
- 1 litre fresh coconut water
- 1 small handful fresh rosemary
- 1 cup watermelon, diced
Coconut Water infused with Lime and Raspberries
- 1 litre fresh coconut water
- ½ small lime, sliced
- 1 cup raspberries
Coconut Water infused with Lemon and Lime
- 1 litre fresh coconut water
- ½ small lime, sliced
- ½ small lemon, sliced
