One of Australia’s leading speciality coffee roasters, Toby’s Estate, has opened its flagship cafe at 325 Flinders Lane, Melbourne.

The team of professional baristas at Toby’s Estate Flinders Lane, headed up by Paul Schliewe, are on a mission to share their passion for fine brews with Melbourne’s coffee enthusiasts.

Paul is one of Toby’s Estate’s top baristas and understands what makes the Toby Estate coffee experience unique.

“We are passionate about sourcing the finest beans, roasting them to perfection in our own unique style and creating distinctive blends,” Paul says.

“Our Brunswick blend has proven to be extremely popular and has developed a reputation as a solid easy‐drinking brew,” he said.

Toby’s Estate is all about respect for the bean – founder and director Toby Smith began roasting coffee on a 5kg roaster in his mum’s Woolloomooloo garage in 1998 and has since traversed the globe on his mission to source, roast and provide the best tasting coffee to consumers.

Toby says he is excited to share his love of all things coffee with a market that deeply appreciates the art of specialty coffee.

“Like any craft, each roaster has their own unique way of doing things and their own approach to sourcing, roasting and blending to create their own unique flavour profile, so we are excited to be sharing our version of the craft with Melbourne,’’ Toby says.

Visitors to the Flinders Lane cafe will be the first to try the new Single Farm 3 Process blend developed from Toby’s new coffee plantation in Panama.

“We are excited to be the first café to serve Toby’s new blend. We will be looking for feedback from the Melbourne market to help us refine the blend before we launch it in our other cafes in Sydney, Brisbane, Singapore & New York,” Paul says.

Testament to offering a unique coffee experience, Toby’s Estate respects the fact that everybody has a different coffee preference and runs regular cupping classes in store to help coffee lovers explore the specialty coffee landscape to find the type of coffee they enjoy the most.

To further complement the ultimate coffee experience, head chef Allen Buist can be seen bustling about the open kitchen, cooking up delectable fresh breakfasts, lunches and decadent sweet treats from the finest ingredients sourced from local Victorian producers.

Great coffee should be accompanied by great food and Allen’s years of experience in the kitchens of many fine dining restaurants and cafes, including Birdie Num Nums, The Attic café and Helvetica Café, ensures this is the case at Toby’s Estate Flinders Lane.

Completing the experience is the location – the café is situated in a beautiful Romanian heritage building, with a focus on creating a light-filled and relaxed space for coffee lovers to escape the pace of city life.

Along with an Espresso Bar & Brew bar, the café is also home to The Toby’s Estate Melbourne Espresso School, offering a range of classes for the home barista right through to accredited courses for professionals.
