With a predilection for experimentation and food as revelation, Justin McPhail and chef Lee Bryant are developing a six course vegetarian degustation using plants and flowers foraged exclusively from the Central Victorian forests. Tramping the forest floor and working their mischief in their test laboratory (read kitchen) the boys are working on a menu that will introduce their guests to some of the plants indigenous to the area showcasing the regions bounty of natural produce.
Plants such as the Manna Gum (a stick of gum perhaps), small vanilla lily, cranberry heath (green berries), sweet apple berries, leek lily, river mint, milk maids, blushing bindweed will be built into dishes that are unexpected, theatrical and of course delicious.
Presented in the Historic Goldmines Hotel Garden in Bendigo and matched with local wine and craft brews.
