Culinary trend polls and food writers have predicted that in the coming months of 2017 we will see a rise in the popularity of plant-based food and vegan cuisine; a reduction in the use of sugar in food and drink products and a continuing rise in the consumption of ‘craft’ products such as beers, fresh farm foods and other ingredients. Not just stopping at our food; this year we are likely to see a clean labelling system introduced on packaging that enables consumers a no fuss way of gaining accurate information about their products on the spot.
So-called superfoods have been doing their rounds over the years and this year will be no different. Predictions have mentioned rumours of the next big superfood that will see the decline in kale sales, although which food this might be has yet to be confirmed. Also, 2017 is looking to see the unprecedented use of coconut in almost everything. Things like curries, cereals, salads, soups and desserts are all predicted to be swept up in coconut mania.
Veganism; gone are the days of it being a radical lifestyle for animal rights activists. More and more people are taking up veganism as a healthy alternative. This brings me onto the next culinary trend expected to make rapid traction this year. Authentic international cuisine. Prior to 2017, there has been a substantial shift in food attitudes, with consumers swaying more towards down-to-earth and “real” eateries over the usual high-street chain restaurants. Mexican, Thai, Indian and something called “Asian Fusion” cuisine are all looking to have a big year in Australia. For those of you who are unsure, fusion cuisine is what happens when foods from a specific region are combined with foods from other regions, making them a delicious single culinary experience. Examples of Asian Fusion dishes to look out for in 2017 are sour orange curry, five spice falafel, Japanese Kimchi, noodle mix pots, or if you want to go full on Aussie fusion; Kangaroo with fig and black pepper dumplings.
