Windsor has been graced with The Chapel; a dining and bar experience that takes its patrons into a realm of a dystopian world. Fusing art, music, signature cocktails and a Mediterranean-inspired sharing menu, The Chapel has created a cyberpunk atmosphere and experience for their new venue, which is now open to the public.
Two cousins, who consider themselves brothers, have thrown themselves into this venue opening journey together. Lee Theodoridis and Dimitri Degrenis have joined forces to dream up this whole concept. As they both grew up with parents in hospitality, the two founders have always had a nose for great food and a vision for even better hospitality.
They have dived head first into pulling together a highly curated, community-based experience for The Chapel. A standout feature of the venue is the custom art by Mayonaize, a well respected tattooist and artist from Australia. You might recognise his work which has been featured in Maha’s venue on Bond St. They have curated a unique RGB lighting experience so his artwork is highlighted in all the right areas, adding to the dystopian feel of the venue.
“Our vision is to create a full sensory journey for our customers, honing in on every detail to craft a unique experience that transports you to a different world. Driven by our love for music, fashion and art, we have infused these elements into every aspect of The Chapel,” says Dimitri Dengrenis.
With live DJ dinner sets, and a full DJ roster already planned for their opening month, The Chapel is set to deliver nothing short of completely unique. The mood of the music will flow to match the dining times; jazz/neo jazz moves into psychedelic rock, stemming into sampled beats which then flows into HipHop and house music from Detroit.
A modern Mediterranean share plate experience draws influence from Lee and Dimitri’s background. Standouts from the menu include the Lamb Shoulder, Roasted Cauliflower and the Half Chicken – all seared amongst recognisable and satiable Mediterranean flavours.
Behind the signature cocktail menu is Marc Frew, who is a long-time staple of the Melbourne bar scene and was the creative force behind Ends & Means.
“Our love for food grew from a young age thanks to our grandparents. We come from a Mediterranean background and cooking and sharing meals together is a big part of our culture. It’s a time to catch up with loved ones and indulge in dishes that have passed through our families for multiple generations.
As I got older, the kitchen became a home for me to connect with the people I care about. I love curating a spread for the dinner table and bringing people together for a shared moment in time. These are the special moments we want to re-create through our ‘share plate’ experience,” says Lee Theodoridis.
Seeing and experiencing a generational love of Mediterranean food, The Chapel team are eager to blend food, drinks, music and art into a seamless and memorable experience. They have conceptualised a venue that is driven by patrons feeling as if they’ve entered a whole new realm in the dystopian environment they have crafted so meticulously.
With an aim to redefine dining, Lee and Dimitri’s concept has seen their heart and soul poured into this opening. The Chapel has a capacity of 117 and a function room which fits 30 pax.

Lee and Dimitri have assembled their best mates, blending their talented craftsmanship to bring their creative vision for The Chapel to life. This truly encapsulates the community feel they want oozing out of their venue.
